Think about the first bite of a food you have been craving. It can feel unusually satisfying: the flavor seems stronger, the texture stands out and your brain immediately registers, "Yes, this is exactly what I wanted." Now compare that with the final bite. It may still taste good, but the experience can feel different. Sometimes the last bite is less exciting because you have already eaten several mouthfuls. Other times, people deliberately save their favorite bite for the end because finishing with a familiar flavor feels especially satisfying. Psychology and food research suggest both experiences can make sense. One important explanation is sensory-specific satiety, a phenomenon in which the pleasantness of a particular food decreases as it is consumed. Research led by psychologist and neuroscientist Barbara J. Rolls found that people rated foods they had just eaten as less pleasant than foods they had not eaten.

Psychology says the first bite arrives with anticipation
The first bite has something the final bite does not: anticipation. Before eating, you may already have an expectation about how the food will taste. You smell the pizza, see the melted cheese or hear the crunch of a freshly toasted sandwich.

This does not mean people literally taste the final bite more intensely. Instead, it suggests that the ending can influence how the experience is remembered and evaluated. So a final bite of warm brownie might have disproportionate importance when you later think, "That dessert was amazing."

Consider someone eating a sandwich who deliberately leaves the crispiest piece of bread until the end.
The final bite may be especially satisfying because it was anticipated. The person knows it is coming. That anticipation can make the ending feel rewarding. This is different from simply eating the same food repeatedly. The psychological meaning of the last bite has changed.
It has become a small reward for finishing the experience. That is why the same piece of food can feel different depending on when you eat it.
Memory does not record every bite equally
There is also a difference between experiencing food and remembering the experience. While eating, your pleasure can rise and fall from moment to moment. Later, however, you may not remember every single bite. You may remember the incredible first taste, the best mouthful or the final bite.
Research on the peak-end rule found that retrospective judgments of painful experiences were strongly related to peak intensity and the final moments rather than simply the total duration.
Food is obviously different from medical procedures, so the finding should not be directly transferred to eating. But the broader principle is useful: our memories of an experience are not necessarily an exact average of every moment within it.

Your physical state also matters. Food tends to be especially rewarding when you are hungry. Research by Rolls and colleagues found that the sight of food itself was more pleasant when people were hungry, and the pleasantness of a food that had been eaten to satiety decreased more than the pleasantness of foods that had not been eaten.
This means the first bite after a long gap without food can carry a very different psychological experience from a final bite after a full meal. The food has not necessarily changed.
