
One of New York’s most in demand restaurants is coming to town next month as London’s appetite for American dining continues to flourish.
Theodora has become a standout restaurant since opening in Brooklyn in 2024, a classic “it spot” where tables are near-impossible to snag at peak times.
The restaurant will pop-up at Firebird in Soho on October 9 and 10 — marking the Brooklyn venue’s first ever international collaboration.
Founded by chef Tomer Blechman, Theodora serves a Mediterranean-inspired menu, focusing on dry-aged fish and vegetables cooked over an open fire.
Blechman is to serve a six-course menu alongside Firebird head chef Ben Muslow, with dishes including an eggplant dip with balsamic glaze — due a comeback? — and za’atar-tickled focaccia.

The dinner will also feature the likes of red snapper ceviche with charred pineapple and lime vinaigrette, grilled sweet potato with blue crab and parmesan, and spicy lamb belly tacos with amba, zhug, and tahini.
Both chefs told the Standard they intend to “round off the meal with a slice of silky flan”.
The restaurateurs Madina Kazhimova and Anna Dolgushina, who founded Firebird — and opened Noisy Oyster in Shoreditch earlier this year — said: “We are so excited to host NYC’s Theodora here in London for their first ever International pop-up.
“This is the next step in continuing to build our ‘Firebird & Friends’ programme and feels like such a natural fit for our guests, given our shared passion for Mediterranean cuisine and live fire cooking.”
Theodora follows a collaboration with Amsterdam’s Michelin-starred Restaurant de Kas as well as London’s Mambow, Ekstedt, and Cavita.
The Theodora x Firebird six-course menu will be priced at £75pp, with an optional wine pairing from Firebird. You can book via opentable.com
