Cynar is an Italian amaro, or bitter, made from, of all things, artichoke. Here, it’s mixed with vermouth and fizz to make a bittersweet aperitif to kickstart a night out. As for the name, well, “1st” because it’s the first thing you drink; and “65th” because our restaurant, Blixen, is at 65a Brushfield Street in Spitalfields market, London. Serves one.
20ml Martini Rosato
20ml Martini Bianco
20ml Cynar
2 dashes orange bitters
50ml prosecco
Orange zest, to garnish
Put a handful of ice in a rocks glass, pour over the martinis, Cynar and bitters, and stir gently. Top with prosecco, garnish and serve.
