Ingredients

  • 1–2 fresh eggs
  • Olive oil (or vegetable oil for higher heat)
  • Sea salt
  • Freshly cracked black pepper
  • Optional: chili flakes or chopped herbs

Method

  • 1. Heat it up
  • Warm a non-stick pan on medium-high heat – no oil yet – until it’s shimmering hot.
  • 2. Sizzle with oil and butter
  • Add the oil; it should ripple instantly. That’s your cue: smell it. You're starting to build flavor.
  • 3. Crack with control
  • Crack the egg straight into the pan (or into a small bowl, then gently slide it in). Tilt the pan so the whites fan out, creating those loved lacy edges. Tip: Add chili flakes to taste.
  • 4. Baste and crisp
  • Let it fry for a few seconds, then use a spoon to scoop up the hot oil and baste just the whites – this cooks them through without flipping, keeping the yolk gloriously runny.
  • 5. Season to taste
  • Sprinkle a pinch of sea salt and a crack of black pepper over the egg. Taste is everything.
  • 6. Finish
  • Cook for another 1 minute until the edges are deep gold and crisp, but the yolk is still soft and inviting. You can add Siracha and Worcestershire sauce to taste.
  • 7. Plate It Up
  • Slide the egg onto your dish – toast, salad, rice – wherever you crave that buttery, umami-rich kick.
