Here's Padma Lakshmi's desi way of preparing healthy Cabbage Poriyal

Cabbage poriyal is a popular side dish relished in several parts of the country, especially in South India. It is prepared using three major ingredients: cabbage, lentils and coconut.

While you must have had several versions of this popular dish, you should try the cabbage poriyal recipe shared by model-television host Padma Lakshmi recently.

Padma Lakshmi took to Instagram to share the recipe with her fans and followers.

"Last week, I showed you how to make cabbage in coconut milk. Here are the same basic ingredients to a much different result! This crunchy Cabbage Poriyal is layered with delicate flavor and comes together in minutes using only shredded cabbage, shredded coco

nut, and some staple Indian pantry items. It’s great as a side dish to any curry or dal and rice, but goes with so much more than just Indian food— I like to eat it the next day wrapped in a warm tortilla and smothered with my spicy scrambled eggs dotted with green Chile and cilantro.

Poriyal is a Tamil word for this particular variety of stir fry, and you could use this same base to sizzle up whatever veg you might have on hand (Beans Poriyal is popular!) it’s not quite #superbowlfood but it sure is good," she writes.

How to prepare cabbage poriyal?

To prepare cabbage poriyal, you need fresh cabbage shredded finely, 1 tablespoon of urad dal, 1 tablespoon of chana dal, coconut, and salt as per taste.

In a small kadai, take some oil, add mustard seeds. Add one tablespoon each of chana dal or split chickpea and urad dal or white gram lentil to this. Fry the lentils till they have a brown color. Add curry leaves once the lentils turn aromatic. Add the shredded cabbage to this. Add salt as per requirement. Add shredded coconut to the cabbage.

"The combination of cabbage and coconut to me is kind of like a dream team," she says in the video.

Cabbage is a nutrient loaded vegetable which is rich in vitamin C and fiber. There are several ways one can prepare delicious dishes from cabbage.

It helps in digestion, improves heart health and decreases inflammation and hence the risk of chronic diseases.

As per reports, 1 cup of cabbage contains 22 calories, 1 gram of protein, 2 grams of fiber, vitamin K, vitamin C, folate, manganese, vitamin B6, calcium, potassium and magnesium.
