Who is René Redzepi? The Noma chef who quit amid abuse allegations

René Redzepi, the head chef of one of the world’s most renowned restaurants, has resigned following allegations of workplace abuse.

The 48-year-old Danish chef, who has been leading the three-Michelin-starred Noma kitchen since 2003, took to social media to confirm he was leaving the restaurant.

Alongside his resignation, Redzepi shared a video breaking the news to the rest of the team.

Confirming his resignation, Redzepi acknowledged his “past leadership,” while an earlier post apologised for his “bad judgement” and “anger.”

“The recent weeks have brought attention and important conversations about our restaurant, industry, and my past leadership. I have worked to be a better leader and Noma has taken big steps to transform the culture over many years. I recognize these changes do not repair the past,” he wrote in the caption.

“An apology is not enough; I take responsibility for my own actions. After more than two decades of building and leading this restaurant, I’ve decided to step away and allow our extraordinary leaders to now guide the restaurant into its next chapter.”

Redzepi has faced a number of allegations from former staff about creating a toxic work environment, including the abuse and mistreatment of team members.

As early as 2015, Redzepi acknowledged his anger in the kitchen, recounting in one op-ed that: “The smallest transgressions sent me into an absolute rage.”

An exposé by the New York Times also detailed accounts of Redzepi “taunting” staff members and “violent punishments” as well as unpaid interns working 16-hour days.

Redzepi has attempted to take ownership of some of these actions, days ago saying he had undertaken therapy and “deep reflection” to manage his anger.

Redzepi is a Danish chef who spent much of his early life working his way up through leading kitchens before spearheading Copenhagen-based Noma.

Since 2003, the dining experience has been named the Best Restaurant in the World five times, and it is considered a pioneer of Nordic dining.

Noma has since transitioned into a food innovation lab and stepped away from traditional dining to focus more on pop-up events and residencies.

The upcoming Los Angeles pop-up tasting menu reportedly costs $1,500 per person and sold out within minutes.

Despite the massive success of the Noma brand, Redzepi has been dogged by allegations of workplace abuse.

Recent reports suggest that the allegations made against the father of three are now “in the past” but according to the NYT, former employees think “he has never been held truly accountable.”

Jason Ignacio White, a former head of Noma’s fermentation lab, shared a number of allegations on social media detailing claims of “punching people” and “stabbing” staff with a fork.

“Noma is not a story of innovation,” he wrote in the caption.

“It is a story of a maniac that would breed culture of fear, abuse & exploitation. His damage to young chefs & trusted team members created a generation of broken dreams and future abusers that spread globally.”
