West Town Bakery unveils new chocolate line

Dec. 01--Just in time for Cyber Monday, pastry chef Chris Teixeira of West Town Bakery (1916 W. Chicago Ave., 773-904-1414773-904-1414), who already makes gourmet interpretations of Cracker Jack, Butterfinger and Baby Ruth bars, is unveiling a new line of chocolates featuring Dark Matter coffee. Dark Matter (738 N. Western Ave., 773-697-8472773-697-8472) supplies the bourbon-barrel-aged coffee beans; Teixeira incorporates them (after roasting and grinding, of course) into three chocolate bars (two milk chocolate, one bittersweet) whose cocoa concentrations range from 35 to 64 percent. The 35 percent bar is like coffee with milk, and the chocolate presence grows with the percentages. The bars, priced at $4.50 or three for $12, go on sale Monday at westtownbakery.com and darkmattercoffee.com. Also keep an eye out for the Unicorn Blood toffee; Unicorn Blood is Dark Matter's Italian espresso roast, and, mixed with 64 percent cocoa and some pink peppercorn, makes an addictive toffee ($6.50).

UPDATE: Starting Monday, the chocolates and toffee will be available in five retail locations: West Town Bakery (15 E. Ohio St.), West Town Bakery Diner (1916 W. Chicago Ave.), Dark Matter Coffee The Mothership (738 N. Western Ave.), Dark Matter Coffee Star Lounge Coffee Bar (2521 W. Chicago Ave.) and Dark Matter Coffee Osmium Coffee Bar (1117 W. Belmont Ave.)
