Waitrose shares A-Z of weird ingredients people will be buying in 2021

Seaweed is set to be the ingredient of 2021, according to upmarket food chain Waitrose - but it's far from the only unusual food people plan to by buy more of.

Cooking is the new commuting, Waitrose has said, with millions more people working from home and looking to break up their day by heading to the kitchen rather than getting in the car or onto public transport.

And that means people have been getting experminental.

Seaweed sales are up 23% when compared to last year and 71% more than in 2018.

Jenna Doran-Twyford, Cooks Ingredients Buyer at Waitrose, said: “Seaweed is an incredibly versatile ingredient and it’s great that customers are becoming more aware of its uses.

"We’ve noticed our customers wanting to understand the true nutritional value of what they are eating, as well as becoming more adventurous in the kitchen.

"By trying out different cuisines, we expect seaweed will continue to grow in popularity and our Cooks’ Ingredients range aims to introduce budding home-cooks to new and exciting culinary trends and we are glad they have embraced seaweed so quickly.”

But it's far from the only new ingredient seeing interest soar.

Chinese rice vinegar searches are up 194%, mirin rice wine is up 188% and Japanese rice vinegar is up 180% as Brits experiment with oriental flavours.

Traditional, hearty foods grew too.

More home working boosted the trend for slow-cooked meat - with searches 46% up on Waitrose.com and sales of oxtail up a hearty 258%. 

As such, the supermarket's magazine has released its A-Z of interesting ingredients set to fly off the shelves this year.

Here are the less-traditional foods that look set to be hitting dinner plates at home over the next 12 months:

  • Black Garlic - Korean varient, used in Asian dishes
  • Cà Ri Gà - Vietnamese chicken curry
  • Dashi - Japanese fish stock used in things like miso soup
  • Ethiopian coffee
  • Fragrant Rice
  • Gram flour
  • Himalayan Pink Salt
  • Icelandic Skyr - dairy product similar in texture to Greek yogurt
  • Jollof - spicy African rice
  • Kalamansi - Philippine lime
  • Lamingtons - Australian vanilla sponge cake, coated in a chocolate and rolled in coconut
  • Mezcal - Fancy tequila
  • 'Nduja - spicy Italian sausage
  • Orange wine - made by leaving grapes in the fermentation vessel
  • Pul Biber - Turkish condiment of salted and oiled flakes of dried red pepper
  • Queen Olives - Spanish Olives grown in Andalucia
  • Russia
  • Sambal -Indonesian chili sauce or paste
  • Tangzhong - Japanese yeast bread
  • Udon Noodles - thick, chewy wheat noodles
  • Virgin Coconut Oil - natural, raw and cold-pressed coconut oil
  • Wayanad Peppercorns - south west India peppercorns, grown in Kerala
  • Xantham Gum - food additive used as a thickener or stabiliser
  • Yuzu - citrus fruit originating from central China
  • Zhoug - chilli-spiced herb blend originally from Yemen
