Wagamama: Vegan chef Gaz Oakley to serve plant-based 'egg' at restaurant takeover

Vegan chef Gaz Oakley will stage a ‘one night only’ kitchen takeover to mark the relaunch of Wagamama at Westfield Stratford City.

The chef has collaborated with the chain to create the “avant gard’n” bowl, featuring the world’s first vegan egg, in the restaurant’s newly-refurbished outlet on Tuesday week. His vegan egg white is created from miso-infused coconut, with a yolk of Sriracha Mayo.

Oakley said: “I was really excited about coming up with the idea of the ‘vegan egg’ as egg features so heavily in Japanese cooking.

“This is not so much a substitute for an egg but looks the part and has a similar consistency. Most importantly, it has an incredible flavour that compliments the dish perfectly”.

Londoners will be able to try the dish, alongside Oakley’s other ground-breaking vegan dishes, on the evening of Tuesday August 27.
