Vietnamese restaurant chain Pho to open in Nottingham

The fresh and healthy flavours of Vietnamese restaurant Pho are coming to Nottingham this summer.

Pho is the brainchild of British husband and wife, Stephen and Juliette Wall, who fell in love with the national dish pho on a trip to Vietnam.

Since founding their first restaurant in 2005, the couple now front a 30-strong UK wide chain in locations including Soho, Manchester, Oxford and Cardiff.

Nottingham is next on the list, or rather Hockely to be more precise, with plans to transform the former National Videogame Arcade in Carlton Street.

The property has been vacant since its relocation to Sheffield in 2018.

The restaurant will specialise in pho, the healthy rice noodle soup, which is dubbed as the ‘soul of the nation’ in its native Vietnam.

The dish is pronounced 'fuh' and the restaurant is 'foe'.

Libby Andrews, Pho's marketing director, said: "Our broths take more than 12 hours to prepare, no stock cubes here, and they are packed full of nutrients, herbs and spices.

"As well as our signature dish, pho – of which we have more than 15 different kinds on the menu ranging from beef brisket to tofu and mushrooms - we also offer a variety of delicious healthy Vietnamese dishes including crispy summer rolls, tasty curries, spicy salads and nutritious colourful rice bowls accompanied by an array of cocktails, fresh juices, Vietnamese beers and a great wine list."

The menu is almost entirely gluten-free and accredited by Coeliac UK.

The vegan menu features 'This isn't chicken' dishes, plenty of plant-based options and prawnless crackers.

All the food is freshly cooked on site every day.

One fan, who visited a branch of Pho in London, said: "Service was really friendly and really helpful with the menu. Food was delivered incredibly quick and was absolutely delicious. It was so tasty, fresh and authentic that it really shocked us."
