A couple who were weeks away from celebrating their 20th wedding anniversary shared photos of their family's visit to a Tasmanian tourism spot just minutes before they died in a crash.

Victorians Nathan and Chei David, both 46, died almost immediately in a fatal head-on crash at Exton near Deloraine, about 160 kilometres from Hobart, on Saturday morning.

The couple and their three teenage children were travelling west on the Bass Highway when they veered into the oncoming lane and collided with another car.

Their children remain in the Launceston General Hospital in a stable condition.

Around six minutes before her death, Ms David, who was in the front passenger seat, took to social media to post several holiday photos of the family.

She described the Cataract Gorge as, "a rare natural phenomenon in any city" and said, "one cannot come to Launceston without visiting this gorge".

Pastor David began preaching at the Loch Alive Christian Centre, at Loch Sport, in 2015 after he moved from the Philippines and settled with his family in Australia.

Pastor Apollo Mijares also works at the church and remembered the couple as people with "pure hearts" that "really loved their family".

He said the family had "conquered all the mountains in Victoria" and they had travelled to the island state to climb Tasmania's mountains.

"All the members of the church right now are feeling the same way, they just never stop hugging us knowing that we've lost someone that's very vital.

Pastor Mijares said the church will celebrate the couple's 20th wedding anniversary next month.

"We will still do it without them, all the families and friends and church people will be there to celebrate their wedding anniversary.

"The church community itself is feeling the loss of Nathan and Chei."

Pastor Mijares is planning to speak with the couple's children later this week to give them the full support of the church.

Friends and family of Mr and Ms David have taken to social media, posting tributes,  such as, "they are such a good loving couple and very loving generous friends," and, "you will forever be missed".

A mother and her one-month-old baby who were in the other car have been discharged from hospital.

A man who was also in the second car was flown to the Royal Hobart Hospital with suspected spinal injuries. He remains in a stable condition.

Police said initial enquires indicate inattention may have been a contributing factor in the crash.

A report is being prepared for the coroner.
