Perfect for using up leftovers, Stovies have been a favourite comfort food for Scots for generations.
Depending on where you live in the country, or how your granny made it, there is always a debate on what should go into them and how they should be made.
However, the true beauty of this classic dish is its versatility, and the fact it is relatively simple to prepare and cook.
And to give it a modern update, Scottish vegan specialists Sgaia have created their own twist.
Known for their plant-based alternatives to steak, burgers and bacon they've created their own take on Scottish stovies.

"We have found such a loving home in Scotland that we wanted to try and create vegan versions of the traditional dishes this great country has,
"We thought where better to start than the traditional Scottish Stovies, so here’s our recipe. Hope you enjoy!"
Sgaia's Vegan Stovies

What you'll need:
1 pack of Sgaia Lorne Sausage (280g)
900g Roast Potatoes
50g Vegan Butter
400ml Vegan Beef Stock (we used Oxo’s meat-free ones)
1 Large Onion
2 large Carrots
1 Large Onion
100 g Diced Swede
How to make it:
1. Peel your Potatoes and dice these up. Then dice your carrots, onions and swede.
2. Dice or mash up your Sausages
3. Add your butter to a large heated pot and melt down before adding your onions to this and frying until they change colour and soften slightly but don’t brown.
4. Add your sausage to the pot with the onions and stir together.
5. Add your potatoes, carrots and swede to the mix, leave it resting on top of the sausage but don’t mix.
6. Pour your stock into the pot. It should be just below your potatoes and veg, feel free to add more if necessary, but do not stir.
7. Bring to the boil and then lower the heat to a low simmer and cover your pot.
Cook for 50-60 mins or until the potatoes soften, test with a fork to make sure they are nice and soft and easily break down.
Season with salt and pepper. You can now stir it all together making a lovely, tasty , sloppy mess that tastes amazing!
We like ours served in a bowl with nice buttered crusty bread.
