Heung-min Son fired Tottenham ahead in the 12th minute, but Spurs’ lead lasted less than three minutes as Joshua Kimmich struck from 25 yards to equalise for Bayern.
Robert Lewandowski then struck just before the break to complete the comeback as Bayern took a 2-1 lead into the second half.
Serge Gnabry scored two more to put Bayern 4-1 up, and though a Harry Kane penalty sparked brief hopes of a fightback, Gnabry completed his hat-trick late on before Lewandowski added a sixth for the Bavarians - and there was time for Gnabry to score his fourth.
