
The chef Tom Booton has announced his first move since his departure from the Dorchester last month.
In August, Booton, 32, left his eponymous Grill at the Dorchester after six years, with his replacement announced as Martyn Nail.
Now Booton is to run a three-day pop-up later this month at the OXO Tower Restaurant. From September 19-21, the chef will serve a three-course menu designed especially for the famed rooftop restaurant, though it will lean into his signature style of “elevated comfort food” (notably, Booton’s Dorchester legacy might be his kicking off of the “posh soft serve” trend).
Dishes will include beef tartare made tableside and topped with a confit egg yolk and toast; a saddle of lamb with a barbecued lamb belly kebab and stuffed courgette flower; and a refined sweetcorn soup served with a crispy chicken wing and pickled girolles. Puddings will include a cherry Bakewell trifle with almond ice cream and a baked Waterloo cheese in pastry, covered with truffle honey, which is intended for sharing.

This three-day event is set to be something truly special for London’s dining scene.”
Reservations are now open for all three days, with lunch and dinner served on Friday and Saturday, and a long lunch on the Sunday.
