Thousands of people made their first trip to the pub since March on Saturday in the first weekend of phase three.
Punters across Ireland are allowed have a pint with their substantial meal so long as they don't stay for longer than 105 minutes.
This saw droves of people get their first pint of Guinness in a pub for over three months.
Former Taoiseach and current Tanasite Leo Varadakr was amongst those who headed out for a dinner date with his partner.
A garda operation began on Friday and officers were out in force peaking into pubs and along streets to make sure the guidelines were being followed.
Deputy Commissioner John Twomey said before the weekend: "It now appears that just a few days after their introduction some licensed premises and their customers are ignoring the public health guidelines.
"By doing so, they are putting themselves and everyone they then come into contact with at risk of getting Covid-19.
"This is not acceptable and we are now expanding our planned checks."
There has been major concern over whether or not the rules are being respected in many establishments.
The Government warned in a statement on Friday that they would be clamping down on those flouting the rules.
"The Government will review a report on compliance from the relevant state authorities, including An Garda Siochana, the public health, and health and safety authorities, at its meeting on Monday," it said.
"Strong enforcement measures will be taken against premises that are not operating in accordance with public health guidelines."
