
This delicately spiced pear bellini is so easy, yet so elegant. To make an alcohol-free version, use chilled sparkling lemonade in place of Prosecco.
Ingredients (makes 6)
- 7 fl oz (about 1 cup) cloudy pear juice, chilled
- 1.7 fl oz (about 3 Tbsp) ginger cordial (or ginger syrup)
- Large pinch ground allspice
- Large pinch ground cinnamon
- 1 red pear
- ½ lemon
- 25 fl oz (1 standard 750 ml bottle) Prosecco, chilled

- Combine the pear juice, ginger cordial, allspice, and cinnamon in a pitcher (we love this hammered café glass pitcher from Pottery Barn) and chill until ready to serve.
- To serve, thinly slice the pear and squeeze over a little lemon juice to prevent browning.
- Pour the pear juice mixture into six glasses (these waterfall coupe glasses from Anthropologie are perfect with their festive gold rims).
