
If you want to make the most of this seasonal fruit before it's gone, this cherry recipe is a really unique and delicious accompaniment. The bright, sweet flavors of this fresh salsa are perfectly suited to a barbecue menu, preferably slightly charred, lamb, beef or poultry. Or serve it with griddled halloumi, peppery salad leaves and a chunk of rustic bread. The salsa tastes best within an hour of making, but it will keep for 24 hours if covered and chilled.
Ingredients (serves 4)
- 2 cups fresh cherries, pitted and chopped (this cherry pitter from Amazon will speed up the job)
- 2 white peaches, pitted and chopped
- 2 tablespoons fresh mint leaves, shredded (try these herb scissors from Walmart)
- 1 small red chili pepper, seeded and finely chopped (or use half if you want it milder)
- 2 tablespoons red wine vinegar
- 2 tablespoons extra-virgin olive oil
