This is a dream ginger biscuit. It has got that comforting, subtle ground ginger flavour and supreme crunchiness, but isn’t as cement-hard as common-or-garden ginger snaps. And as if that’s not enough, it is generously coated in good-quality dark chocolate.

Quite the opposite of the above, these are fiery and therefore a bit more niche – you might not want to serve them when the vicar comes to tea. They’re crunchy and treacly, resemble a thick brandy snap in texture, and will leave your tongue tingling. Photograph: Graeme Robertson/Guardian

A lighter, crumblier affair than the previous two, with only half the biscuit dipped in dark chocolate, adding sweetness and a silky texture. The crowning glory, however, is the chewy, intense stem ginger chunks.
