The simple shortbread recipe that has just three ingredients

A traditional treat that's always sure to raise a smile, shortbread has been enjoyed in Scotland since the days of Mary Queen of Scots - who is credited with its invention.

A favourite during the festive period, there's no reason why it can't be enjoyed during summer too.

Especially when the experts at Taste at Home have created such an easy recipe that features only three ingredients and is perfect for trying at home.

Submitted by Ms Rose Mabee of Selkirk, Manitoba, it's quick and easy and takes just half an hour to make.

What you'll need:

  • 500ml (2 cups) butter, softened
  • 250ml (1 cup) packed brown sugar
  • 500 to 600 grams (4 to 4.5 cups) of all-purpose flour

How to make it:

Preheat oven to around 180 degrees.

Mix the butter and brown sugar until light and fluffy.

Add 450g (3.75 cups) of the flour and mix well.

Turn dough onto a floured surface and knead for 5 minutes, adding enough of the remaining flour to form a soft dough.

Roll to 1/2 inch thickness then cut into three 1-inch strips and place 1 inch apart on non-greased baking sheets.

NB - [Feel free to play around with shapes here, so long as you keep the thickness you could do circles or triangles]

Prick with a fork then bake until biscuits are lightly browned (around 20-25 minutes).

Leave somewhere to cool (preferably away from wandering hands or hungry mouths) then serve with coffee and tea and enjoy.
