The Palomar: An exclusive Masterclass with head chef Tomar Amendi

The Palomar is one of those places which makes life a little bit better.

Voted best restaurant at last year’s Observer Food Monthly Awards, The Palomar opened in 2014 offering food from modern-day Jerusalem, with dishes influenced by the rich cultures of Southern Spain, North Africa and the Levant. Aside from the food – a brilliant, unselfconscious tangle of Mediterranean flavours and influences according to Jay Rayner – much of the restaurant’s success lies in its vibrant atmosphere, particularly the vibe around the long counter up front.

The restaurant is always fully booked and takes reservations two months in advance, but our Masterclass offers you the amazing opportunity to join head chef Tomer Amedi in his open kitchen to watch him at work and enjoy his wonderful dishes.

You’ll learn the fundamentals of his cuisine, from how to prepare raw fish, how to cook and clean offal and how to prepare your own spice mix. Amedi will demonstrate how to cook several dishes from The Palomar Cookbook, and will inspire you to use these recipes to enrich your home cooking. You’ll also have the chance to participate and help Amedi during the demonstration and then sit together to sample the dishes.

  • An introduction to raw fish – how to fillet a fish and create a delicious dish
  • A look at the fundamental spices that play such an important role in Jerusalem cuisine
  • The inside story of the restaurant’s signature Jerusalem Mix – how to poach veal sweetbreads, how to clean and prepare chicken livers and hearts, and how to use them to produce this elevated dish
  • A demonstration of how to prepare one of the Palomar’s most popular desserts, The Malabi

More about your teacher…

Tomer Amedi was raised in Jerusalem by a Moroccan mother and Kurdish father. His culinary heritage has played an important part in his life. He has been cooking with the Machneyuda group since 2009 and moved to London with his wife, pastry chef Yael, to become head chef of The Palomar in 2014.
