The Nottinghamian: Unusual ice cream and hedgehog havens

Today's edition of the Nottinghamian follows the reconstruction progress at a fire-ravaged pub that has been closed since a devastating blaze in June. We also look at the important issue of food waste and take inspiration from the ideas of Nottingham's top chef.

There's a heart-warming story of how residents, doing their bit to preserve wildlife, have won the title 'Britain's Biggest Hedgehog Street'. Plus we have a round-up of the top ten things to do this week across Nottingham from doughnut decorating for children to a tribute to the late great George Michael.

Veg ice cream

It's far from his usual style of culinary magic but Nottingham's most celebrated chef has been concocting recipes using ingredients that most of us would put in the bin. Sat Bains, owner of two-Michelin starred Restaurant Sat Bains in Lenton Lane, has been doing his bit to help reduce global waste and inspire home cooks to get creative in the kitchen.

He was one of three chefs around the world challenged by the Why Waste? project. Instead of being binned carrot and beetroot trimmings, melon rind and the outer shell of fennel were candied and used to turn soft vanilla ice cream into Tutti Fruitti with a cone made out of stale bread and a drizzle made from beetroot scraps.

You might think coming from a Michelin-starred chef, there's all sorts of fancy techniques and equipment required but that's not the case. Find out more here

Pub progress

Work is well underway to rebuild the Tap & Run pub in Upper Broughton after it was devastated by fire back in June. It will cost an estimated £1m to reconstruct the pub, co-owned by two well known members of the cricketing world, Stuart Broad and Harry Gurney.

A new roof is currently going on and once the pub is watertight, the internal work can begin - and Mr Gurney said there was a lot to do. He said: "We're going to have to dry out the floors, make sure the underfloor heating's working, then put in brand new electrics and plumbing. It's pretty much a new build."

With insurers accepting liability for the accidental blaze, work on the popular venue started almost immediately, and initially involved making the site safe, erecting the fencing around the site and removing any precarious timbers. The gable ends were taken down, as were the chimneys, to make sure there was no danger to public health.

Such is the level of affection that Upper Broughton villagers have for the pub and its workers, they collected £1,500 to donate to the team in lieu of the tips they've been missing out on. Read the full story here

Pick your own pumpkin, Oaks Lane, Oxton, Southwell - now until October 31

'Tis the season for pumpkin picking (and gourds and squashes) and there's 40,000+ to choose from for either carving a spooky face or turning into a warming autumnal soup. BrewDog Notts: Bottle Club, Broad Street, Hockley - Weds 19 October

Bring along a bottle to share with like-minded people. The theme is collaboration - the style doesn't matter, as long as it involves a collab with either another brewery, a coffee roaster, a clothing brand, nothing is off limits. Full details here

The World Famous Baby and Toddler Disco, Nottingham Playhouse, Weds 19 October

Designed for children up to the age of four, and equally enjoyable for parents. A chance to dance, socialise, play party games and sing along. After Dark - A Victorian Gothic Adventure, Nottingham Castle, from Sat 22 October to Sun 30 October

Join famous Paranormal Investigator Dr Abraham van Helsing for an evening of spooky storytelling. On the 13th day of October, 1877, three experienced workmen installing new handrails and lighting in the caves beneath Nottingham Castle mysteriously vanished. When they didn't return to the surface at 6pm as normal, two maids working in the Ducal Palace looked down the stairs and were over-awed by 'a red, fiery glow, a noise akin to a baying hound, and toxic, sulphurous smells' emanating from the depths. Hedgehog haven

Villagers have created 'Britain's Biggest Hedgehog Street' with a series of 'highways' for the prickly creatures, linking to more than 30 gardens. Residents, on Dale Road, Keyworth, have made gaps, in or under garden fences or walls, to allow hedgehogs to freely roam in search of food, mates, and nesting materials - a small but vital action for the species' long-term survival.

The road was crowned 'Britain's Biggest Hedgehog Street' by wildlife charities The British Hedgehog Preservation Society (BHPS) and People’s Trust for Endangered Species (PTES), who together run the nationwide campaign Hedgehog Street.

Many residents led by Jennifer Manning-Ohren, of the non-for-profit community group Wild Things Keyworth, have been working to make Keyworth hedgehog friendly since July 2021. Read more here
