Indian lassi is a refreshing alternative to milkshake. Sweet or savoury, the method is simple: blitz yoghurt with your chosen flavouring, water and ice. This version is a favourite with my own kids. Serves four.

600ml plain yoghurt
80g caster sugar
1 tbsp rose water (or to taste)
Pinch of ground cardamom (optional)
200ml cold water
100g crushed ice cubes

Put the yoghurt, sugar, rose water, cardamom and water in the blender. Process for a minute, add the ice and process for a minute more. Serve in tall glasses.
