
This February, Sushi by Bou, the experiential omakase held inside secret hotel rooms, opened its first location outside of New York– at the former Versace Mansion on Miami Beach, now a boutique hotel, Villa Casa Casuarina.
Just like their other locations, guests secure their reservations online ($125, inclusive of tax and gratuity). On the date of the dinner, they first ”check in” with the front desk attendant in the lobby who hands over a key card and escorts them up to the 500-sq. ft. Gianni’s Suite. A neoclassic style lounge replete with emerald couches and a fireplace is the the receiving area to enjoy a cocktail (the Old Fashioned Pearl is highly recommended) before sitting down for dinner.
The sushi bar seats four (six when the occasion arises), and for 60-minutes, chef “Miami Mike” fires up approximately 17 pieces of sushi, from fresh sea urchin from Hokkaido, to scallops topped with lightly smoked charcoal salt, to marinated blue fin tuna with scallions and daikon, to a nicely-marbled wagyu topped with sea-urchin.




They have a self-service sake vending machine where guests can select three sakes for $30. They include the crisp Kubota Senju (Ginjo), the soft and mild Chiyonoso Shared Promise (Junmai) and the umami-laden Yuho Eternal Embers (Junmai), served in a variety of Edo Kiriko glassware.

In New York, Sushi by Bou has locations at Hotel 3232 at Nomad, The Sanctuary Hotel in Times Square, and at Jue Lan Kitchen at Flatiron, and will soon be opening at Zeckendorf Towers on Union Square. It is the brainchild of Michael Sinensky and Erika London of Simple Venue, a hospitality company which focuses on transforming underutilized spaces in hotels.
