The day of giving thanks and over-indulging is upon us.

Homesick Americans and thankful Brits can get a slice of the action by cooking up some traditional Thanksgiving dishes at home.

Ingredients

  • 750g grated pumpkin or squash
  • 250g brown sugar
  • 200g salted butter
  • 3eggs
  • 150g cream
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1/2 tsp ground cinnamon

Method

Make or buy a sweet pastry tart case. It can be as deep as you want, but the deeper the better.

Preheat an oven to 110C.

Put the pumpkin, sugar, butter and spices in a suitably sized pan and sweat gently, until the mixture is well combined. Stir often to prevent it catching on the bottom of the pan.

Put the mixture into a food processor or blender and blend until smooth, add the cream and eggs and mix until just incorporated. Pour the mix into your tart case and bake for 40 minutes or until the mix no longer wobbles.

Remove from the oven, all the tart to cool completely and finely grate a piece of nutmeg over the top. Cut into thick wedges and serve with some crème fraiche.
