Swift Sons' 'inner restaurant' has a name, opening date

Oct. 29--Boka Group principals Kevin Boehm and Rob Katz announced a couple of weeks ago that there would be a seafood-focused space within their new steakhouse, Swift Sons (1000 W. Fulton Market, 312-733-9204).

Now that space has a name. And an opening date.

Cold Storage, a 60-seat restaurant occupying about 1,000 square feet, will open Nov. 18.

"We wanted to put a little space between Swift Sons (which opened Oct. 18) and Cold Storage -- get our legs under us," said Katz.

Cold Storage -- the name an homage to the building's former function and an oblique nod to the iced raw-bar items that will anchor the menu -- will not accept reservations and, in addition to raw bar items, will offer seven daily fish (available grilled, steamed, fried or a la plancha), along with a handful of sandwiches, including fried clams, grilled walleye and crab salad on toast.

At the moment, the plan is that steaks from Swift Sons will not be available in Cold Storage, Katz said.

"(Cold Storage) has a different kitchen, completely separate and stand-alone," he said. "We, of course, try to appease everybody, but right now, the Cold Storage menu is the only menu you're going to get."

That said, there will be some crossover dishes, such as the seafood towers, the Tavern burger (also served in the Tavern space, which has a separate menu from Swift Sons, as well) and the steak tartare.
