The aspiring reality star split with the Great British Bake Off star over the summer and she has been moving on with her life by building her celebrity profile.
And the strawberry blonde beauty gushed about dreaming of finding a romance like her mum and dad's after she failed to find a long-lasting romance with Paul.
Summer is obviously a hopeless romantic at heart.
She wrote: "My mum and dad's love and marriage is what I dream of."
Summer has been flaunting her toned stomach in a grey crop top as filmed on her Instagram stories.
The social media guru has been topping up her tan while she enjoys a break away with her parents.
Her latest post comes after she was dropping hints she's making a beeline for the I'm A Celeb jungle.
The personality said she was going for "Safari vibes" when she documented her outfit choice.
Speculation has been rife that she's tipped to make an appearance on the reality show in November.
TV bosses were said to be hoping Summer would spill all the beans about her and Paul's two-year romance.
A source also told the Mail On Sunday that she intends to use I'm A Celebrity as a career springboard.
"Summer is the person to sign up right now and she is keen to get herself on television," said the insider.
"Obviously I'm A Celebrity would be her top prize. The six-figure sum and the exposure is the biggest you'd get anywhere but she also wants to work on her own ideas.
"She's a bright girl and she has some thoughts on her own shows so it's very much a case of watch this space."
