Six by Nico team to open pop up cheese shop in Glasgow's west end

Cheese lovers in Glasgow are in for a treat this month after it was revealed that a new cheese shop 'pop-up' is set to open in the west end.

The team behind Six by Nico say The Cheese Club Shop will take up a temporary residence at Byres Road in the former Fopp Music Store - a site recently purchased by the Glasgow-based restaurant group.

Transforming the entry-level of the venue, the pop-up is set to open to the public at the end of March.

The news comes as plans by Six by Nico were revealed for a new restaurant and rooftop bar in the building, which formerly housed the music store and an Italian restaurant.

Award-winning cheesemonger Stephen Sweet will be leading the pop-up store's day-to-day operations, as well as curating The Cheese Club shops products on offer.

Joining the Six by Nico team, he will also take control of the Cheese Club's online distribution services on the restaurant chain's HOME-X platform.

The new Head Cheesemonger said: "The goal of The Cheese Club shop is to provide customers with great tasting cheese while also showcasing the incredible work, pride, and effort that goes into making these beautiful artisan and farmhouse cheeses."

Stephen also confirmed that as well as a selection of incredible cheeses, the store will offer a range of chutneys, crackers, olives, and cured meats, as well as a deli counter serving both hot and cold snacks.

Food fans will be delighted to know they'll also be putting that cheese expertise to good use with a takeaway menu featuring loaded toasted sandwiches and hearty brunch items.

Open weekly Wednesday - Sundays from 10am - 6pm, the exciting pop-up venture will open from the end of March at 358 Byres Road.

Founder of Six by Nico, chef Nico Simeone, added: "Plans to develop and grow Six by Nico, in both physical and virtual markets, will be announced later this year.

"We've always had big ambitions to grow our portfolio and open new restaurant brands throughout the United Kingdom and Ireland. Our journey started in Glasgow's West End, and the community we first served is vital to our organisation's development plans.

"We hope our customers are as excited as we are about The Cheese Club shop pop-up opening this month and our restaurant plans for the location on Byres Road later this year."
