Six by Nico's new menu has a Greatest Showman-inspired circus theme for reopening this month

Glasgow eatery Six By Nico has today announced the next theme for its reopening menu - and it's one that will hit your plate with a bang.

Inspired by his memories of the circus experience, chef Nico Simeone and his team have created a 'big top' themed menu with just a hint of The Greatest Showman about it.

New six course tasting menu THE CIRCUS includes six courses draws inspiration from eats found under the big top - but as ever, they're given a fine dining twist.

The first course is Waffles and Ice Cream; that's chicken liver parfait, compressed peach and a potato cris. The Candy Butchers that follows is a beef carpaccio with burger sauce, aged parmesan and pickled cucumber.

Course three is called The Illusionist, comprised of chicken ballotine, crushed artichoke, brown shrimp, caper and raisin pure and the next a cleverly named A-crab'atics, which is a take on sole, baby courgette, bergamot gel, crab tortellini and bisque.

The penultimate course is named The Greatest Show, and will include a smoked flat iron steak, wild garlic, black truffle emulsion and ox cheek pasty.

The final act ends on a sweet note with The Grand Finale, a desert of peanut butter parfait, rhubarb compote, blood orange and, of course, candy floss.

The vegetarian alternative boasts a completely meat-free six take on the six courses.

Waffles and Ice Cream is a goats cheese mousse substitute for the chicken liver parfait, while Candy Butchers is a beetroot tartare.

The Illusionist course is comprised of herb gnocchi, samphire, crushed artichoke, caper & raisin puree.

The Greatest Show will substitute the flat iron for a smoked cep mushroom served with a black truffle emulsion, crisp king oyster and wild garlic.

Chef Nico Simeone said: " Who among us doesn't have fond memories of a visit to the circus when we were young? The circus is a fascinating visual and our re-opening menu is full with colourful unpretentious, playful dishes.

"Everybody needs a little extra excitement right now and our team had lots of fun developing and creating this theme as we prepare to reopen our Six by Nico restaurants across the country."

The menu is priced from £32 per person with the option to enjoy an expertly selected wine pairing for an additional £26 at each restaurant.

In line with covid restrictions, Glasgow's Six by Nico restaurants will be reopening on April 26 cases permitting.
