Officers have said that a gang of people , some of which were in the Amsterdam Convenience Store, rushed to help the victim shortly after he was slashed.
The suspect ran off from the scene on foot in the direction of Duke Street, onto Parr Street.
He is described as white male, in his late 20s, around 5ft, 3in tall. At the time of the incident he was wearing dark clothing and had his hood up.
Merseyside police now wish to speak to the people who helped the victim after the attack.
Detective Inspector Neil Dillon said: "This was a horrible attack which left a man injured, fortunately not more seriously.
"Unfortunately, in recent months we have seen the catastrophic consequences of knife crime on Merseyside and we simply won’t stand by and allow people to carry knives and threaten the safety of themselves and others.
"Our officers work tirelessly with businesses, licenced premises and the public and patrol busy areas of Merseyside at key times to ensure people can enjoy our city centre safely without fear of violence.
"We are working to find the person responsible for this attack and put them before the courts and we would urge anyone with information to come forward.
"We understand that there was a group of people on Colquitt Street and within the Amsterdam Convenience Store who helped the victim directly after the assault.
"If this was you, then please get in touch as information you hold could be vital to our ongoing investigation.
"Similarly if you were in the Colquitt Street area on Thursday night and saw anything suspicious then please come forward and tell us what you know to remove dangerous weapons and those who use them from our streets."
The victim attended hospital for non-life-threatening injuries the following day.
CCTV, forensic and witness enquiries are ongoing and anyone who witnessed the incident or with any information is asked to contact police.
