The brunette revealed her bronzed pins in a pretty patterned black and white kaftan complimented with a pristine white pedicure.
And she added a pop of colour with her red lip.
"Don’t know where my new lease of confidence has come from but I hope it stays," she told fans on her Instagram.
And she added: "Scott not cropping my head out in a photo for once."
Former Corrie star Catherine Tyldesley responded with love heart-eye emojis.
"You look stunning!!!" exclaimed another follower with flame and love heart emojis.
"Look at you!!" gasped another fan.
"You are GLOWING," another told her.
Sharing a photo of herself and Scott enjoying their time away together Scarlett wrote lovingly: "When you think you’re the only person who can’t find love in the world, tell yourself there is another waiting for you somewhere."
Last week Scarlett, who shot to fame on the Channel Four show in 2014, was emotional as she shared a photo of herself in a bikini to celebrate her new-found body confidence.
The star said it was a 'big deal' as she wore a two-piece floral costume as she smiled for a picture shared on her Intagram.
In a frank post the 30-year-old said she hadn't dared to wear a bikini in five years because previously she hadn't liked what she saw in the mirror and admitted she had missed holidays and nights out for that reason.
"This shouldn’t be a big deal but it is and I’m actually crying whilst writing this," she opened up to her followers.
"It’s took me so many years to gain confidence with my body.
"I’ve let it down at times and missed out on holidays and nights out because I’ve not liked what I’ve seen in the mirror.
"But hey after 5 years of not daring to wear a bikini I’m actually doing it!"
The winner of I'm a Celebrity...Get Me Out of Here! in 2016 is now hoping to inspire others.
"So I hope this gives you the confidence to buy that dress, that bikini, not miss out just because your body doesn’t fit into a certain category (because let me tell you all these things are made up nobody is too slim, too curvy, too athletic, too many stretch marks, too much cellulite)," she penned.
And she ended her inspirational post with the words: "LIVE YOUR BEST LIFE."
Scarlett won the sixteenth series of I'm A Celebrity and has since appeared in shows including I'm A Celebrity spin-off show Extra Camp and Ant and Dec's Saturday Night Takeaway.
She became a regular cast member on Gogglebox alongside her parents Mark and Betty.
Most recently she appeared on the ITV2 series Apocalypse Wow.
