May 11--The transformation of South Michigan Avenue from restaurant wasteland to dining destination continues with Monday's opening of Remington's (20 N. Michigan Ave., 312-782-6000).
The American restaurant is the latest from 4 Star Restaurant Group (Dunlay's, Crosby Kitchen, The Smoke Daddy), who lured Todd Stein back from Atlanta to become the group's corporate chef and executive chef of Remington's.
"My wife's ecstatic," said Stein, who was doing the one-marriage, two-cities thing for the last year.
Stein is a former executive chef at mk, opening chef at Cibo Matto in the Wit hotel (a restaurant, now closed, that was never the same after Stein left) and executive chef at The Florentine in the JW Marriott in the Loop.
Stein describes the restaurant as a classic American grill.
"We have incredible steaks," he said, "and a great commitment to rotisserie; we're doing prime rib and rack of Berkshire pork and chicken that way. We're taking great American dishes -- baked potato, artichoke dip, crab cakes -- but elevating them and using the best possible ingredients."
The 250-seater also will have a raw bar featuring up to six oyster varieties daily.
Remington's is open for dinner daily. Lunch is served Monday-Friday; weekend brunch Saturday-Sunday.
