Ramsey's kitchen delights

Jeff Ramsey, the Japanese-American chef behind the multi-award winning Kuala Lumpur restaurant Babe, will be starring at The Athenee Hotel Bangkok's French restaurant, Reflexions, until March 20.

Born in Japan, Ramsey began his culinary training under chef Masayoshi Kazato, Japan's official sushi ambassador. Later on, he decided to broaden his gastronomic perspective and gain knowledge of other techniques in order to develop an original style.

He studied under José Andrés, a protégé of the legendary chef Ferran Adrià of elBullí. From there, he was handpicked to be executive chef of Tapas Molecular Bar at the 6-star Mandarin Oriental Tokyo hotel. It was while he held this position that Ramsey began to express his own style of modernist cooking, earning a Michelin star in 2009, at the age of just 32.

Since then, he has featured at pop-up restaurants across the globe and is a much sought-after culinary educator, consulting on restaurant openings in the US, Europe and Asia.

At his groundbreaking restaurant Babe, Ramsey displays artful finesse and boutique sophistication in progressive modernist cuisine through Japanese-accented tapas. Offering a fun dining experience as opposed to the structured world of fine dining, his creations are an exquisite mix of flavours, textures and temperatures, promising an unparalleled multi-sensory dining experience.

As guest chef at Reflexions, chef Ramsey will be presenting a form of interactive dining, treating guests to a display of French cooking which combines Japanese elements.

Featured dishes include kamasu (Japanese barracuda) sashimi; a tartlette of Japanese seafood; Alaskan king crab with a silky egg custard; a sandwich of Martell Red Barrel and foie gras; and A5-graded wagyu sukiyaki steak.

Seating will be at the bar counter, allowing for personal interaction between the chef and his guests. Space is therefore necessarily limited, with room for only 12 guests per sitting.

Lunch is priced at 2,980 baht per person and dinner at 4,800 baht per person. Wine pairing options are available.
