Protein pancake recipe perfect for your summer shred

Protein pancakes are becoming extremely popular and are favourites amongst fitness fanatics.

They are a well-balanced breakfast idea for a healthy lifestyle, helping boost your energy before or after a workout.

Pinch of Yum has shared it's 'best protein pancakes' recipe, so give it a try.

It will only take 10 minutes for prep, and 10 minutes to make. This recipe makes around six to nine pancakes and contains no refined sugar.

Each pancake is around 79 calories, containing 4.5g of protein, not including the protein powder as the nutrition facts vary by product.

Ingredients

  • 1 cup oats
  • 1 banana
  • 2 eggs
  • 1/2 cup egg whites
  • 4 teaspoons baking powder
  • a pinch of salt
  • a pinch of cinnamon
  • 1–2 scoops protein powder
  • 2 tablespoons flax meal

Method

  1. Put everything in a blender together and turn on medium low speed until the ingredients are well mixed.
  2. Heat a nonstick griddle pan to medium/high heat. Add the batter in small circles – about 1/4 cup per pancake.
  3. Sprinkle with blueberries or chocolate chips if you want. When the edges start to look dry after around two or three minutes, flip and cook another minute or two on the other side.
  4. Use whatever toppings you like!

Some tips are if the pancakes are falling apart, you may need to turn the heat up.

You can also add more or less flax to get the consistency just right for you.

Try keeping the batter in individually portioned jars for easy ready made breakfasts. Try refrigerating or freezing cooked pancakes to make this breakfast idea even more convenient.
