Pork Mindy's, sandwich shop from Food Network's Jeff Mauro, sets opening date

Jan. 04--Pork Mindy's, the Bucktown sandwich shop from "Sandwich King" star Jeff Mauro, has announced the day you'll finally be able to shove a Pig Candy BLT in your mouth: Friday, Jan. 8.

The restaurant, a partnership between Mauro and Chicago entrepreneur Kevin Corsello, will feature slow-smoked meats in sandwiches such as Bao to the Pork (hickory-smoked pork shoulder, plum sauce, pickled daikon and carrot, and cucumber and jalapeno relish on toasted bao with a side of decent pun) and that famous BLT (extra crispy bacon, lettuce, Roma tomatoes, dry-rub mayo and balsamic caramelized onions on griddled brioche).

The menu has one vegetarian sandwich: cold-smoked mozzarella, Roma tomatoes, basil, sun-dried tomato spread and balsamic glaze on toasted focaccia. There are also salads, concretes (vanilla-ice-cream-peanut-butter-banana-Pig-Candy whaa?) and sides like tot'tine, a play on poutine made with tater tots instead of french fries.

As far as ambiance, expect small (40 seats) with a lot of hot pink.

The restaurant is also a good litmus test to determine if a date is age-appropriate: Either you both chuckle at the name, or you both don't get the reference.
