Pinkmans Bakery to cut opening hours because of covid problems

An award-winning Bristol bakery has had to slash its opening times because of ongoing problems due to covid.

Pinkmans on Park Street had already reduced its opening hours to a five-day week but it is now cutting it down to just weekends throughout August.

The Park Street bakery has been one of the city’s best-loved café venues since it opened in 2015 and has scooped countless local and national accolades since then, including a listing in The Sunday Times top 30 bakeries in the UK.

Owner Eddie Pérez and his team make everything on site including the bread, doughnuts, cakes and tarts. Pinkmans also serves wood-fired sourdough pizzas, salads and sandwiches to takeaway but also to eat inside when the current restrictions are lifted.

But from this week, it will only open Friday to Sunday, although the owners stress that they want to return to longer opening times as soon as they can.

“The last 18 months have been non-stop,” said co-owner and baker Eddie Perez.

“We’ve tried our best to change and adapt with all things covid related but it’s taken time and energy.

“We want to take some time to rest, recuperate and take stock. Our dedicated team have worked so hard and it’s time for them to take well deserved holidays.

“We will come back in September revived and rejuvenated and ready to open more days.”

Pinkmans will now open from 9am-4pm on Friday and Saturday, and 10am-4pm on Sundays.

Earlier this year Pinkmans opened a second site at 324 Gloucester Road in a collaboration with Claire Moyne, owner of the 25a Old Market café near the Temple Way roundabout.

Called simply Pinkmans Bakery Pop-Up, the new Gloucester Road shop is serving takeaway coffee, doughnuts, sourdough loaves, pastries and lunch items.
