Colourful food is healthy food, as an old saying goes. The ruby colour in beetroot indicates the presence of anthocyanidins, anti-oxidants linked to a healthy immune system, clear eyesight and good circulation. Our thanks to greengrocer Charlie Hicks for the photo.
