Pancake Day recipe hack uses one secret ingredient for fluffy American pancakes

Pancake Day is officially here as Shrove Tuesday marks one of the tastiest days of the year.

Whether it's breakfast or dinner, a stack of pancakes will be the star of the menu on the day.

Fluffy, light pancakes are a thing of beauty, but they can be deceptively difficult to get right.

It's possible to be just off the mark and not know why they're flat, dense or not so delicious.

When it comes to the texture, it can be difficult to find the right consistency of batter that results in a fluffy finish.

Radnor Infusions claims the secret ingredient to extra fluffy pancakes is sparkling water.

They say the bubbles in the carbonated water infuse into the batter that expands when heated, giving the pancakes a soft lift and making them flavourful and light.

Why is sparkling water the secret ingredient for fluffy pancakes?

Chris Sanders, hydration expert at Radnor Infusions, shared why this secret ingredient is the key to fluffy pancakes: "As sparkling water is carbonated, it naturally aerates the batter.

"Sparkling water retains fizz for much longer, so when this gets in contact with heat it will form small bubbles in the heat-setting mixture to create fluffy pancakes."

If you want to use a heart-shaped mould as pictured, he added: "I would also advise to use a jug with a pouring spout to make it easier to place the batter into the heart mould."

Method

  1. Add in the flour, salt and Radnor Infusions in a bowl and whisk until smooth.
  2. Gradually stir in the milk and leave the batter covered for 20 minutes. The batter should be quite liquid and drip from the whisk in a thin stream.
  3. Heat the oil in a frying pan and add around ¼ of the batter into the heart shaped mould.
  4. Ensure the batter is distributed evenly and after 30 seconds, remove the heart mould and carefully flip over with a spatula to cook the other side until golden brown. Repeat until all the batter is cooked.
  5. Take off the pan to cool down and add the toppings of your choice!
