Old Edinburgh ghost sign of the butcher who created haggis appears on Costa shop

An old sign for one of Edinburgh's most famous butchers, who is thought to have curated the original haggis recipe, has been spotted by a resident of the capital.

In a tweet, Twitter user and Edinburgh resident @BruntsfieldMinx said: "Ghost sign of the old Macsween butchers shop on Bruntsfield Place."

On Bruntsfield Place, the Costa Coffee store can be seen fully functioning inside with their signs also outside the shop.

However, one specific section of the sign has not been moved, and the faded writing reads: "Es Macsween and Son", as it used to read "John Charles Macsween and Son".

The butcher's shop serviced schools, restaurants and the University of Edinburgh from 1953 until 1996, with seven vans making daily deliveries across the city, eventually becoming a household name locally.

This store was where owner John Charles, known locally as Charlie, developed his legendary recipe for haggis.

The recipe calls for a mix of lamb offal and beef fat, onions, oats and spices, it is encased in beef ‘cap’, a stretch of intestine that can also be used for sausage casing.

Charlie’s recipe has changed only once since the 1950s, on the advice of food expert Derek Cooper.

Since beginning in a tiny corner shop in Edinburgh, the business has grown to become nationwide, with the company launching gluten-free haggis, meatballs made out of haggis, and even a blended 'Highlander Burger' - which is beef, haggis and secret spices all wrapped into one.

To see a small part of Edinburgh's rich history still existing in modern times would be a special treat to anyone, so let's hope the sign stays where it belongs.
