Nottingham's 'most authentic' Indian taken over and will become South American eatery

Curry will be replaced by tacos at the former Indian restaurant Singh's in Nottingham.

The country may be in lockdown with uncertainty about what will happen on December 2, but it hasn't stopped the new business pushing ahead for the future.

The premises, at the top of Market Street, has been renamed Escobar, with a South American-style tapas menu in the pipeline, including flavoursome breakfasts.

Singh's, which was regarded as one of the most authentic Indian restaurants in the city, didn't reopen after the first lockdown.

The new owners of Escobar haven't revealed an opening date but say: "Here you can savour on countries like Columbia, Argentina, Ecuador, Chile and Mexico."

The 80-seater restaurant is also getting a makeover to create colourful Mexican vibes and two cocktail bars.

Escobar will be open for breakfast, with a menu of burritos and tortillas filled with egg and avocado, sausage, egg and bacon quesadilla, escramble (a twist on scrambled eggs) and smashed avocado on toast.

Lunchtime offerings include South American cornmeal cakes arepas, burritos, and loaded nachos - all for under a fiver.

The main menu has a wide choice. Tacos come with pork, chicken, steak, shrimp or vegan jackfruit.

There's also the promise of Argentinian choripan (a kind of hot dog), sweetcorn fritters, chicken tenders, lamb chops, tequila and lime chicken wings and garlic king prawns.

Bigger dishes of lamb chimichurri , chicken tequila fajitas chipotle lamb rack and burgers will be served.

Tequila cocktails will be a speciality. As well as a classic margarita, drinkers can choose from rosemary and watermelon flavours or a colourful Tequila Sunshine, tequila with pomegranate and orange.

According to the website opening hours will be seven days a week from 10am to 10pm.
