NoMad Hotels to debut in Singapore complete with craft soft-serve sundae-slash-cocktail bar

Some combos just make sense. Tomato soup and grilled cheese. Cookies and cream. Peanut butter and jelly.

A combination we hadn’t considered before is soft-serve sundaes and cocktails – but now we’ve heard NoMad Hilton Singapore is opening a spot offering just that, we’re 100% behind it.

The 173-key, 19-storey hotel will open in the heart of Orchard Road in late 2026.

The brand is known for its foodie offering, and its debut in Asia Pacific will be no exception, with three restaurant and bar concepts as well as a poolside lounge at the property.

Singapore is one of the most exciting food and beverage cities in the world,” Leo Robitschek, global head of bars and hospitality development at Sydell Group, which created the lifestyle brand, said.

“Our goal is not simply to bring NoMad to Singapore, but to create something that feels genuinely connected to the city and its culture. Each venue has been designed with its own identity and energy, while sharing the warmth, generosity and sense of occasion that define the NoMad experience.”

NoMad Hotel Singapore’s dining concepts

Of the three concepts launching at NoMad Hotel Singapore, the one we’re most excited about is Sticky Fingers.

By day, it will serve gourmet soft-serve sundaes, and by night, it will become an intimate cocktail bar inventively pairing desserts and drinks.

Guests can also get their alcoholic beverage fix at The Tropicana Club, a spot inspired by both Havana’s legendary Tropicana Club from 1939 and the city’s own version which opened in 1953.

Expect classic tipples like martinis, daiquiris and Manhattans, plus tropical drinks given a twist with ingredients from across Southeast Asia.

NoMad Grill, a New York-style chophouse serving dry-aged meats cooked over woodfire, will also open here, as will poolside spot Lú Bar.
