A new restaurant serving "proper" pizza could soon open in Waterloo .
Il Capitano's is the brainchild of Jay Wilson - who also owns Fuel Station with his brother Kurt.
Mr Wilson has submitted a licensing application to Sefton Council to open Il Capitano's on South Road.
If given approval, he says the restaurant will use a special pizza oven imported from Naples to prepare fresh, authentic pizzas using quality Italian ingredients.
Neapolitan-style pizza originated in Naples, Italy, and it's prepared with simple and fresh ingredients - and Jay says this is what "proper" pizza should be.
The licensing notice states the 32-seat restaurant would operate Monday-Sunday 11am-11pm and the application includes permission to sell alcohol, and to play recorded music.
Il Capitano's would be located at 143 South Road, on the former site of a fruit and vegetable shop.
Mr Wilson said: "I'm extremely passionate about this pizza. Our dough will be prepared onsite and fermented for at least 24 hours, true Neapolitan style.
"The oven will reach 500 degrees and cook pizzas in under 90 seconds - and we'll only use San Marzano tomatoes."
If given permission, the menu will consist of cold starters, pizza and traditional Italian desserts. There'll also be a selection of Italian drinks and cocktails.
Mr Wilson continued: "I want to open on South Road because it's cute and quirky, isn't it? It's like another Lark Lane .
