New European restaurant to open in city centre

A new restaurant and bar is opening on the former Baldwin Street site of Bar Buvette, which closed earlier this year.

Marmo - meaning ‘marble’ in Italian - will be run by husband and wife team Cosmo and Lily Sterck, who previously worked in a number of well-known London restaurants.

The new restaurant will use high-quality ingredients sourced from small producers in the south west, as well as fish and shellfish from Cornwall.

The opening menu will feature mussels and lemon sole from Cornish fishmonger Wild Harbour; Tamworth pork from Gothelney Farm in Bridgwater; fruit and vegetables from Wilding Farm in Chew Magna; and home-made charcuterie, pasta and ice-cream.

The wine list will showcase European producers who farm their vineyards organically or biodynamically and who use minimal or no chemical intervention in the winery.

The couple behind Marmo met eight years ago while studying at the University of Bristol. Cosmo began his chef training in London at the influential St John restaurant then went on to work at London restaurants Magdalen, Brawn and Rubedo, as well as Yard in Paris.

Since returning to Bristol last year, he has been running the kitchen at Bosco in Clifton Village.

Lily worked as a lawyer before moving into restaurants, working at London restaurants Luca and Six Portland Road, and most recently as manager of Bar Buvette .

Marmo will be open for lunch, Tuesday to Friday, including a set lunch; and for dinner Tuesday to Saturday.

Bookings will be online and space will be reserved for walk-ins at the bar and on two large communal tables.

Marmo opens in mid-August.
