New Indian restaurant launches in Merchant City next week - and the vegan menu sounds incredible

There's a new kid on the Merchant City culinary block with the launch of this exciting new Indian restaurant.

But the team behind it know a thing or two about what they are doing, we can assure you of that.

After many years of catering to the discerning palates of the Asian weddings and functions market, husband and wife team Ajay and Jaspreet Kumar have decided to introduce the Glasgow masses to their unique brand of cooking.

Next week they will open the doors of their modern Indian restaurant in Ingram Street, serving a menu only a lucky few will have experienced in the past.

Vegan street food favourite takes over city centre kitchen space

Head Chef and Owner Ajay said: “I want to challenge the status quo and show that Indian cuisine can be dynamic and modern whist also offering healthy choices.

"Our incredible Vegan menu which runs separate from our standard meat menu offers choices never available before."

The site is based on the old Ad Lib Site at 33 Ingram street.

Jaspreet has also called on advice from her father Mr Charan Gill MBE, the mastermind behind the successful Ashoka chain who has been playing an advisory role.

Glasgow's first vegan burger restaurant set to open this summer

Charan said: “Food always evolves and Chef Ajay likes pushing the boundaries of Indian cuisine. Swadish is a refreshing addition to the vibrant restaurant market in Glasgow.

"The mix of authenticity, can use of local produce and modern cooking methods is the principle driving force at Swadish. Ajay recognises the importance of preserving authenticity and the menu he has created is exciting, modern yet also traditional.

The introduction of a separate vegan menu has been inspired by Ajay's wife Jaz and other members of the family who themselves are vegan. This offering is long overdue and we are certain it will be well received.”

SWADISH is due to open on Wednesday, May 22  and is sure to become a popular destination for diners in Merchant City.

We can't wait!
