New Edinburgh whisky and gin bar Tipsy Midgie opens this week

The capital is set to welcome the arrival of an exciting new whisky and gin bar this week.

Tipsy Midgie is set to open this Tuesday in the Pleasance area of Edinburgh, a stone's throw from Arthur's Seat and the Holyrood Distillery.

The Tipsy Midgie is the latest project from The Whisky Forager, who previously owned award winning seafood restaurant, the Kilted Lobster and whisky and food pairing restaurant, Whisky Forager.

Work has been well underway in recent weeks to create a relaxed and chilled out 30 seater bar, with whisky and craft gins taking centre stage.

Whisky aficionados will find hundreds of different bottles behind the bar, including a vast selection of old and rare, unicorn and distillery exclusives.

Further explaining the Tipsy Midgie concept, the team say: "Besides many a single malt you’ll also find Whisky Hyballs (whisky hybrid cocktail menu) where Colin uses the whisky regions as inspiration and profiles flavours adding a culinary influence allowing a fresh look at single malt whisky which has culminated in these hybrid creations!

"The Gin Perfect Serve menu using gins from independent Scottish distilleries and combines them with and seasonal garnishes, tonics and mixers, to showcase flavour and harmony.

"Whisky Hyballs include the “MonstArdbeg” using Ardbeg Wee Beastie with Ultra White Monster and roasted rosemary salt; and the “Rusty Girder” using Kingsbarns Balcomie with Drambuie syrup and Irn Bru Sorbet a nod to the traditional "rusty nail"

"As well as drams, whisky hyballs and gin perfect serves you’ll also find “Can and a Dram”, a modern take on a Scottish tradition of 'hauf and hawf' using heritage and new distillery blended whisky and pairing them with a local craft brewery, giving unique experience to this much loved pub tradition.

"And for Champagne and Prosecco Connoisseurs, we've developed a gin liqueur and bubbles menu, pairing the finest Champagne and Prosecco with an amazing gin liqueur."

Furthermore, Tipsy Midgie will hold a number of exciting weekly events, as described by the team:

  • Chocolate Pairing Tuesdays: Using only distillery edition and unique single malts to pair with Master Chocolate Maker Sebastian Kobelt’s finest creations, Colin will pair 5 delicious drams with exciting results to contrast, compliment and challenge the palate. Each week a new direction, new whiskies and new flavours to explore will make this a weekly event one not to be missed!
  • Distillery Discovery Thursdays: We will offer our guests a chance to immerse themselves in Scottish history and folklore, and enjoy a weekly event where we showcase a different distillery; inviting Brand Ambassadors, Master Blenders, tour guides, managers and those devoted to the production of the finest malts and gins Scotland has to offer, ensuring a unique insight into their own journey into the amazing "water of life". With 5 bespoke drams/gins, hand picked to tell a story, we’ve created a tasting event that promises to appeal to both novices and enthusiasts alike, expertly guided by the passionate champions of their craft ie Glencadam Distillery will be joining us on the 7 th April, Darnleys Gin on the 21 st April and Ardnamurchan on the 28 th April.
  • Flight Club Sundays: Each Sunday, we will be delving into the joy of whisky flights, showcasing 5 single malts, comparing cask finishes, old and rare, new and modern, old and gold, where each theme has been chosen by Colin himself. 5 stunning drams to be tasted blind, with only the smallest hints given to what’s in store. At the end all will be revealed! Limited availability for this event as many of the whiskies will be single cask, discontinued or very limited editions.

Meanwhile, the bar has already been dubbed an 'Instagram hotspot' on account of its neon lighting, beautiful resin bar counter tops and tables.

Owners say: "The whisky wall is most impressive with a whisky mural and lit glass cabinets that naturally give off a gorgeous amber glow which compliments the dark blue interior."

Tipsy Midgie is located at 67 St Leonards Hill, Edinburgh, EH8 9SB and will be open Tuesday to Sunday 12noon – 12am.
