Despite the never-ending restrictions facing Edinburgh's hospitality scene at the moment, there are a few moments of good news when a new venue manages to open its doors for the first time amongst the chaos.
Enter Gulp Ramen - a brand new ingredient-led ramen shop located on Leith Walk in Edinburgh.
The wee restaurant focuses on producing the highest quality noodles and broth for their unique bowls of ramen, alongside a daily changing menu of Asian influenced snacks.
Dishes include a classic Tonkotsu ramen bowl - rich pork and roast chicken broth, chasu pork collar and shoulder, a slow cooked duck egg, miso corn, edamame, spring onion, daikon, wood ear mushroom and finally, puffed crackling.
Veggies can enjoy a meat-free version of the classic with laksa style roast onion, mushroom and vegetable broth, silken tofu tempura, daily changing raw, cooked and pickled seasonal vegetables and nori puffed potato.
We've got our eyes on the 'Reaper Miso' version of their ramen bowls, with any bowl on the menu getting seriously spiced up with the restaurant's Carolina Reaper and Sichuan pepper miso tare.
Sample snacks include a 'Philly Cheese' - a bao bun with BBQ beef rib eye, American cheese, onion, pickled gherkin, chilli burger sauce - and langoustine gyozas.
The owners of the shop wrote on their new website: "Mad to be opening a ramen shop during a pandemic? Perhaps we are!"
The restaurant is only taking bookings of four people at a time due to the size of the wee shop in order to maintain social distancing for all guests.
