Here's how to make it yourself at home...
The dressing
- 50ml PERi-PERi sauce - whatever flavour you desire
- 10ml soy sauce
- 1 tbsp sesame seeds
- 1 tbsp brown sugar
The rice bowl
- 2 tbsp sesame oil and 1 tbsp vegetable oil mixed together
- 1 courgette, grated
- 1 carrot, grated
- 80g spinach
- 1 cup long grain rice
- 150g cooked shredded chicken
- 2 large eggs
- 2 tbsps vinegar
Method
- Cook your rice as per the instruction on the packet - if you're being lazy and using microwave rice, hold off on this step until later
- In a frying pan, add your mixed oil and all of your vegetables until their slightly soft
- Whilst your vegetables are cooking, heat a saucepan of water. Once boiled add your vinegar, whisk the water and crack in an egg.
- After three minutes take the egg out and drain on a paper towel
- In another drying pan, add your PERi-PERi sauce, soy sauce, sesame seeds and brown sugar. When the sugar has dissolved, add your chicken
- Once the chicken is cooked, all you have left to do is dish it up
- Pop your rice into a bowl, top with your veg, chicken and poached egg
