
Mandarin Oriental, Bangkok on June 28-29, is to host a special culinary collaboration by two French culinary wizards: Richard Ekkebus, chef-owner of two Michelin-starred Amber restaurant in Hong Kong; and Arnaud Dunand Sauthier, chef de cuisine of the hotel's very own two Michelin-starred Le Normandie restaurant.
Chef Richard Ekkebus is the culinary director of the Landmark Mandarin Oriental, Hong Kong and oversees the highly acclaimed modern French restaurant Amber. For 10 consecutive years, the restaurant has held two Michelin stars and was ranked No.24 in last year's prestigious World's 50 Best Restaurants.
The Dutch-born Ekkebus is celebrated for his brilliant innovative twist on classic French cuisine using only finest ingredients.
As a guest chef, Ekkebus will work with Bangkok's own Dunand Sauthier to prepare a "Four Hands" collaboration menu.
Highlighted dishes include Kamchatka red king crab merus à la plancha with ginger emulsion, sea buckthorn purée in home-made crab soy; poached blue Brittany lobster with black radish and green capsicum curry; Kura awabi black abalone with spiced chickpea compote, braised pork chin and crispy pancetta; Mieral barbarie duck with eggplant, black garlic and grapefruit; and bitter Kaconkao chocolate and tofu ganage and foam with cacao sorbet and almond praline.
Prices are 5,500 baht per person for a 6-courses lunch, and 9,800 baht per person for an 8-course wine dinner.
