Mimi's Bakehouse is opening at 'vibrant' new Edinburgh location near Stockbridge

Popular cake shop Mimi's Bakehouse has announced plans to open at a new Edinburgh location.

The cake business confirmed to Edinburgh Live they will be opening their doors in Comely Bank.

The shop will be near to the bustling Stockbridge neighbourhood, known for its eateries, food markets, and bakeries.

They will initially open as a pop-up, until customers are safely allowed to enter the cafe when hospitality is allowed to re-open.

Michelle Phillips, Owner, Mimi's Bakehouse told Edinburgh Live: "We are so excited to be coming to Comely Bank, it's a fantastic and vibrant area of the city and when the opportunity to take on this site came up we were so excited to take on the challenge.

"Lockdown and this last year has been so tough for everyone and as a business we have adapted and continue to do so to keep in business and bring sweet treats to the people of Edinburgh.

"This store will join Leith, Royal Mile, Corstorphine, City Arts Centre and Lauriston Castle as we grow our shop portfolio to another great Edinburgh neighbourhood."

The family-owned bakery has gone from strength to strength recently, opening a number of new ventures - including a 'boutique' at East Lothian's Archerfield Walled Garden, a new cafe on the grounds of Edinburgh Castle and a pop-up van at Fort Kinnaird.

Taking to Instagram yesterday, Mimi's Bakehouse posted a picture of some keys with the caption: "Big news! We've got an exciting project baking in the oven in Comely Bank...watch this space. Love Mimi X"

Locals reacted to the news, with one person penning: "Stop it, if that’s on the corner across from Waitrose, my bank balance and waist line is in BIG trouble."
