Mexican-style diner targets first Glasgow venue plan after fighting back from fire

A Mexican food restaurant is preparing to open its first venue in the central belt as it bounces back from a fire that left one of its Aberdeen outlets closed for eight months.

Damage to one of its eateries this year forced FreshMex to put plans for a Glasgow outlet on hold, but its city centre site reopened in October, allowing bosses to shift their focus back to their expansion plans.

Robbie Moult, director of FreshMex, said: “We went through a difficult time for such a young business after the fire. At a time when we wanted to expand and develop the brand further, we had to refocus our attention on renovating the Aberdeen site in order to relaunch as quickly as possible. We were fortunate enough to have our second site and Deliveroo operation still active.”

The business began as a pop-up food stall in 2015 before securing a permanent kitchen residency at the Adams Lounge Sports Bar in Aberdeen and opening its own standalone restaurant in July 2018.

The start-up won £60,000 from the Scottish Edge business competition last December and received support from Business Gateway to reopen its damaged premises.

Moult added: “Together with the amazing Scottish Edge win in 2018, financial backing for a third site in the Central Belt and the popularity seen on Deliveroo, 2020 is the year we will expand beyond Aberdeen and look to repeat the success we have seen in the North East.”

The company’s burrito recently retained its ranking as the most popular restaurant dish in Scotland on Deliveroo, taking number ten position in the delivery firm’s UK league table and 70th place on its global chart.
