Master of fine dining

KiSara, the fine dining Japanese restaurant at Conrad hotel, has been one of Bangkok's much-treasured establishments since opening in 2000.

Showcasing some of the best seasonal ingredients, mostly imported from Japan, the refined fare is prepared according to Japan's long-established culinary tradition with a touch of modern-day aesthetics.

To match the exquisite culinary creations is the restaurant's gorgeous open-plan setting that blends time-honoured authenticity with contemporary details. The open space, decked out in earth tones with copper, stone and softwood, features a centrestage teppanyaki counter, a classic sushi bar and main dining area as well as five private rooms.

After a long absence over the past year due to Covid-19, KiSara recently reopened under the helm of new Japanese head chef Naohisa Yamada.

Meals, at this stage, are offered through a comprehensive selection of set menus that encompass quick lunch sets, bento (lunch boxes) and multi-course kaiseki (haute cuisine) meals. The latter is available for both lunch and dinner.

The kaiseki menu, an exhibition of taste, texture and appearance, comes with many options to cater to various gastronomic preferences.

For lunch, choices range from a seasonal set, a premium sushi set, a teppanyaki set and a vegetarian set. Prices range from 1,200 baht to 1,800 baht.

The popular teppanyaki kaiseki lunch (1,800 baht) starts off with a duo of the light and airy potato espuma and a refreshing seaweed and vegetable salad.

A steamed dish of savoury egg custard followed. For the main course, guests are to choose between beef or seafood.

Representing the beef is a 150g Australian Angus beef tenderloin steak. The seafood assortment comprises teppan-grilled salmon, Hokkaido scallop and tiger prawn.

The set comes with garlic fried rice, miso soup, pickles and a dessert of the day.

Choices are a bit larger for kaiseki dinner, priced 1,200-5,000 baht.

The highly-recommended eight-course sushi dinner kaiseki (3,000 baht) comprises a photogenic ceviche-like starter featuring marinated hamachi with garden vegetables and uni (sea urchin roe) in a martini glass.

A gorgeous platter of seasonal sashimi then follows. It features fresh and supple sweet shrimp, succulent slices of flounder and a creamy scoop of uni.

The steamed egg custard for dinner is upgraded with a luxurious touch of foie gras and truffle.

While the grilled dish is represented by oven-grilled Hokkaido scallop with miso cream sauce, asparagus, edamame, corn, onion and broccoli on a dry hoba (magnolia) leaf.

Australian Wagyu beef stars in the fifth course. Thin yet expansive slices of the top-grade Wagyu are rolled into bite-sized cylinders and served in a salty sweet sukiyaki broth with fresh egg yolk dipping.

The sushi main course showcases toro (fatty tuna), kinmedai (golden eye snapper), striped jack, flounder, salmon, sea bream, sweet botan shrimp, flame-seared abalone, surf clam, scallop and uni.

To wrap up a finely detailed meal is a beautiful dessert. It's a unification of matcha green tea ice cream crepe with mango and green tea pudding.

There's a selection of gozen lunch sets, priced at 720 baht-1,300 baht. The set includes a main course, savoury egg custard, salad, steamed rice, miso soup, pickles and chef's choice of dessert.

If a dragging meal doesn't suit you, come at lunch time for lunch set and bento.

Options include a sashimi set, a pork or chicken cutlet katsu set, a yakizakana set with grilled fish of your choice, a tempura set, a curry rice set, a kaisen chirashi don sashimi rice bowl set, a grilled eel with rice set, an assorted tempura with rice set. Prices range from 720 baht to 1,380 baht.

To welcomes diners back, KiSara now offers a promotional 50% discount on the second meal set ordered in the same bill. Reservations are recommended.
